Ham + Egg Cups Made Easy

Okay ladies, let’s talk!

Taking on a full work week, mom life, maintaining an exercise routine, social life, and making room for self-care may feel like a feat these days. On top of that, trying to sustain a healthy diet + eating habits?! I used to think it was impossible to “fit in” prepping meals for the week, but I found easy + realistic options that keep even the busiest people on track. My “go-to” breakfast - Ham + Egg Cups! These protein-packed babies are healthy, low-carb & keto-friendly, & super delicious. The best part? Less than 5 minutes of prep time.

  1. Preheat oven to 350. While it’s warming up lightly spray a muffin tin with non-stick cooking spray. Then, insert your ham slices to fill the shape of the muffin cup.

  2. Next, sprinkle in your favorite shredded cheese into the bottom of the ham cup.

  3. Now, crack one egg into each ham cup, on top of the shredded cheese. Garnish with more shredded cheese, salt, pepper, or any other seasoning.

  4. Once your oven is ready to go, cook your egg cups for 20-25 minutes. I typically just go by the color of the ham, making sure it doesn’t burn!

That is literally it! I typically prep/cook these in between making our Sunday morning breakfast. In other words, they are super quick + simple to put together! Obviously, any lunch meat can work - I’ve also tried turkey breast, which came out super good!
